
I have tried many macaroni and cheese recipes and I had never thought of trying it with goat cheese... Here is a macaroni and cheese recipe that will surprise your guests... You can use thyme spice instead of dill, in my opinion thyme also marries well with the goat cheese.
. 1 lb. macaroni elbows (or other short pasta types like rotini, penne)
. One big goat cheese log, more if you like
. 1 egg yolk
. 1 cup heavy cream
. 2 tablespoons dill
. 1 onion
. 2 hot small red chili pepper
. 2 tablespoons butter
. salt
. pepper
1) Bring a pot of water to a boil, add salt and cook pasta according to the time indicated on the package; drain the pasta when cooked
2) Peel and mince the onion; cut the peppers in halves lengthwise, remove the seeds and chop very finely.
3) Melt the butter in a skillet, then sauté the onions and peppers a few minutes. Reserve.
4) Cut the goat cheese log in two, slice one of the halves in slices and reserve. In a bowl, mash the remaining cheese with a fork, add the egg yolk and cream; mix until smooth.
5) Turn the broiling grill of the oven on. Put them in a pan with cooked onions and peppers, dill spice and egg, cream and goat cheese mixture. Season with salt and pepper, mix.
6) Pour into a baking dish; top with slices of goat reserved. Broil for 3 minutes in the oven and serve hot.
