best macaroni and cheese header

A special cajun-style shrimp macaroni and cheese recipe...

This recipe for a Cajun macaroni and cheese positively proves the combination of cajun spiced shrimp work very well with our macaroni and cheese tradition... we had already successfully tried shrimp in macaroni and cheese, now we add the cajun spices and a special cheese blend; the only choice left is the type of pasta you will use... for this recipe I recommend rotinis... "Bon appétit!


Ingredients for four guests:




* 1 lb. Short pasta: fusilli, rotini, penne or macaroni elbows
* 8 tablespoon butter, used in different steps
* 1 lb. medium shrimp cut in thirds
* 1 tablespoon cajun seasoning powder,
* 1 medium onion, chopped
* 3 tablespoons white flour
* 3 cups milk
* 1/2 lb. grated Swiss cheese
* 1/2 lb. grated sharp Cheddar cheese
* 1 lb. grated Monterey Jack cheese
* Salt and pepper, to taste
* 1/4 cup bread crumbs
* 1 tsp. parsley
* 1/3 cup breadcrumbs

Procedure:

1) In a pot with salty boiling water, cook the pasta until very al dente, or about 7 minutes.

2) Melt the butter in medium sauce pan. Add shrimp, sprinkle with half the cajun seasoning. Cook 3-4 minutes, remove.

3) In same pan melt 2 tablespoons butter, add the chopped onion and sauté one minute. Mix in the flour, cook for one minute. Mix in the milk, whisk and simmer approximately 4 minutes. Add grated Swiss cheese, grated cheddar and half the Monterey Jack cheese. Stir until cheeses have melted and the sauce is smooth. Add the remaining cajun seasoning, salt and pepper. Mix in the cooked and peeled shrimp.

- Add the veal and cook up until the meat is well done but not completely cooked.

4) Preheat the oven to 350°F. In a buttered baking dish pour the cooked pasta; pour cheese sauce over the pasta and gently mix so that all the pasta is well coated by the cheese.

5) Top with remaining Monterey Jack cheese, bread crumbs, 3 tablespoons melted butter and sprinkle some parsley over.

Bake 45 minutes; serve this cajun shrimp macaroni and cheese to your happy guests...
