best macaroni and cheese header

For a delicious combination of 4 cheeses: Shiitake and asparagus macaroni and cheese!

We are presenting here a fancy macaroni and cheese recipe with an interesting ingredient combination; it uses small shiitake mushrooms and asparagus. Of course it isn't the first idea that comes to mind when considering to make mac and cheese but this is a nice fancy diversion from the usual recipe.


a quick macaroni and cheese

Ingredients for this:

* 1 lb. Long macaroni (Bucatini)
* 1 lb. small shiitake
* 2 cups of fresh asparagus
* 1/4 cup clarified butter
* 1/2 cup white wine
* 1/4 cup extra virgin olive oil
* Salt to taste

For the cheese cream sauce
* 1/2 cup chopped French shallot
* 1 tablespoon clarified butter
* 1/2 cup white wine
* 1 cup cream
* 1 cup grated gruyère cheese
* 1 cup grated fontina
* 1 cup old cheddar cheese, cut into cubes
* 1/2 cup of fresh parmesan
* 1/4 cup milk; more if needed
* Salt and pepper

For the butter with flour
* 4 tablespoons butter, melted
* 1 tablespoon flour

How do you will make this now:

1. Pasta and vegetables: bring a large pot of salted water to a boil. Add olive oil and cook the macaroni until al dente. Drain.

2. Clean the asparagus under cold water and peel if necessary. Drain. Carry a second pot of salted water to a boil and cook the asparagus about 3 minutes, then plunge into ice water. Drain, cut the ends and slice the stems into slices.

3. For the shiitakes, cut the stems and keep the heads. Rinse the latter in cold water by brushing. Add salt and pepper and sauté in butter a few minutes in a pan. Deglaze with white wine and cook until mushrooms have absorbed the liquid.

4. Cheese cream sauce Sauté shallots in clarified butter and add the white wine. Reduce by half. Pour the cream and reduce by 1/3. If necessary, adjust the texture with a little milk.

5. Prepare the kneaded butter that will define the cheese sauce's texture; add it to the cream and shallot sauce. Combine all cheeses except the Parmesan to the sauce. Remove from heat and add the macaroni, asparagus and shiitake.

6. Pour into a buttered ovenproof dish and sprinkle with freshly grated Parmesan. Brown in the oven. Serve with style!
