Recipe for macaroni and cheese with bacon

This is a chunky and baked version of this site's favorite dish: the macaroni and cheese, this time with bacon. For the picture below I added the cooked bacon after making the recipe, which also works fine..

What you will need for this:


1 lb. (500 g) macaroni pasta noodles (or any other favorite short pasta)
1 lb. (500 g) good quality bacon
4 eggs, beaten
2 cups hot milk
5 tablespoons of marinaded jalapeno chilies, coarsely chopped
2 teaspoons onion powder
2 fresh red tomatoes, sliced
2 cups grated orange cheddar
freshly ground black pepper


How do you will make this:


boil the macaroni pasta in boiling water as outlined on the package minus 2 minutes boiling time
(as the pasta will finish their cooking in the oven) and pour them when ready and strained into a large enough oven-going pan.

Cut the smoked bacon in small strips and cook them in a skillet, for about 5 minutes. You do not need to add butter to cook them...
once cooked, empty the bacon pieces into the pasta pan;

Preheat your oven to 350 F;
Word of the wise: when mixing, for the next few steps, mix gently, very gently!
Sprinkle the grated cheese on top of the pasta, then mix.
Beat your eggs in a separate bowl; pour the mixed eggs on the pasta, then mix
Now pour the milk and the marinaded jalapenos over the macaronis and mix.
Spread the sliced tomatoes on the top
Sprinkle some more grated cheese on top of the tomatoes and the pasta.
Bake in the oven at 350 F, for 30 minutes, or until the cheese on top has built a nice golden crust...

Pull out of the oven and serve your bacon macaroni and cheese while it is hot!
