
Macaroni and cheese recipes work real well with the flavor of tomatoes, which give it a different color and taste; this is a baked recipe that is very easy to do.
1 pound macaroni pasta (also great with rotini!)
1 onion chopped finely
2 tablespoons extra-virgin olive oil
Oregano to taste
Basil to taste
1 teaspoon of sugar
Salt
1/2 cup freshly grated Parmesan cheese
1 can ready-made cream of tomato soup from the store
2 cloves garlic, that you will crush in
freshly ground black pepper, to your taste
1 pound cheddar cheese, completely grated
1) Cook your pasta " al dente ", in other words boil them for slightly less time than the package calls for;
2) Pour the olive oil in a skillet, cook your onion bits just until they start to become transparent;
Add oregano, basil, sugar, salt, pepper, Parmesan and cream of tomato
Put in about half your grated cheddar cheese in the recipe and melt slightly
3) Simmer for about 10 minutes, no need to cover
Press in the garlic and cook another 5 minutes;
4) Pre-heat the oven to 350 F; Pour the cooked macaroni in an oven-going pan, pour the tomato sauce over them, then sprinkle the rest of the cheddar cheese on top.
Bake in the oven in 350°F about 15 minutes, or until your cheese that sits on top is melted
Broil in the oven for a few minutes, or up until the cheese on the pasta has formed a nice 'au gratin' golden crust
Pull out of the oven and allow 15 minutes to cool down before serving.
